Retsina of Attica Kourtaki NV

Wine Makers Notes: Made from the Savatiano grapes grown near Athens this Greek classic is not the Retsina of old that any people might remember. It is a fruit driven wine framed by the addition of a small amount of Pine tree resin during frermentation. The pine flavour is disticive and works well with the fruit. This wine is extremely popular in Greece and nearly every holiday maker that has made the trip to Greece will have at some point tried this wine. Ideal with Greek food – hence the 4000 year heritage of this wine.

Your guests will love it!!
Do you save all your corks? There a different types of corks now. I save only real cork. Surprisingly it did not take me long to collect a large amount of them. This became an issue because I was running out of places to put them. I ran up to my local craft store and picked up a shadow box. Took my corks and just started filling the shadow box. It came out great! Looks like something you would buy for a good price. I say just give it a try!

Wine Maker Remarks: Cabernet Sauvignon is fermented and aged in the traditional red wine method: fermentation in stainless steel cooperage on the skins at temperatures above 75 F (24 C). After fermentation, the wine is separated from the skins and a portion is moved into a combination of French and American oak barrels for extended aging. Just prior to bottling, the alcohol is gently removed by cold filtration.
